The olive oil we have selected is from juvenile olives, which have been cold pressed to preserve their herbal, grassy flavour. The lemon oleosaccharum (sugar-oil) has the zest in it to give small bursts of flavour to contrast the savoury olive oil.
These apricots are dried in the dark without preservative sulfites to produce a dark fruit with treacle notes. As with all stone-fruits, they pair beautifully with toasted almonds, and the extra Marcona almonds included pack an additional aromatic touch to round out this flavour.
Taking inspiration from the classic Spanish sweet Higos Rellenos, the orange zest and cinnamon compliment these dried figs perfectly. For an extra indulgent touch, we love serving this gelato with a glass of Pedro Ximénez or sweet sherry.
